The Handful Salad

Now that Farmer’s Markets are in full swing in Vermont, the produce, crafts, and energy bars are abundant. I have recently been purchasing greens from many local producers for a salad that I try to eat a lot during the summer. Here goes (there are no measurements…):

Handful of Mustard Greens
Handful of Spinach
Some Shredded Carrots
Handful of Dried Cranberries
Handful of Virginia Peanuts (the extra crunchy ones!)

Mix this in with your favorite dressing. I use raspberry vinagrette or organic honey mustard. Now, you have a simple, fresh, summer salad to enjoy.

Come See Us at the Nordic Soccer Tournament

We were contacted by good friend Dwayne Williams about showing up for the Nordic Soccer Tournament this coming Saturday, the 14th, at Essex Tree Farm in Essex, Vermont.

We’ll be sampling and selling our delicious all natural energy bars from 2-5 pm.  A portion of profits will be donated to the Jarred Williams Foundation.

Dwayne is the father of Jarred Williams, who sadly passed away at the ripe age of 13 from a brain tumor.  Jarred loved to play soccer, and I grew up playing with him.  If you remember, we also did the Turkey Trot for Jarred last November, and it was great to meet all of you that had tried our energy bars.

Eddie’s Energy Sponsors American Mojo!

Wow–I don’t think I have gone this long without writing on my blog, but time seems to fly when you are having fun.

I am happy to announce that Eddie’s Energy Bars is sponsoring team American Mojo, a unicycling team that hails from New England, with two members residing right here in Vermont. They recently participated in the New York City five boro ride. Mark, Eric, and Bill were three of six unicyclists in a sea of 30,000 bikers!

Team American Mojo will be riding in the Ride the Lobster race in Nova Scotia June 16-20 powered by Eddie’s Energy Bars.
